Clai Giorgio

Giorgio Clai has always devoted much of his life to the restaurant world, then, in 2001 he decided to leave everything to follow his passion: devoting himself to the cultivation of vines and the production of wine. He founded his company in Krasica near Buje, Istria Bianca.

The soils of the vineyards, marl clay and sandstone, enjoy a particularly favorable climate for growing vines due to the meeting of the mountain current coming from Ucka with the sea’s one, which goes up Mirna river.

The cultivation of vineyards, which have an approximately 6 hectares area, is inspired by the principles of biodynamics and treatments are kept to a minimum: the uses of exclusively copper and sulfur are banned as well of all the synthetic products.

Also in the cellar there are only natural treatments: the grapes ferment through traditional maceration without addition of enzymes and yeasts, following the aging in large wooden barrels. Giorgio Clai has set as his goal returning to the past, when wine was made in the vineyard and in the cellar, because “only with respect for nature in the vineyard and patience in the winery you can get a wine that is a child of the land where it was born”, according to him.

His wonderful wines Ottocento Bianco and Ottocento Rosso are also certified biodynamic Triple A.
