For this reason Elio Grasso has decided, since always, to produce all of his wines in purity, vinifying separately every single vineyard, capitalizing on the coexistence between the traditional oak barrels (the big Slavonian ones) and the modern barriques of french origin. This choice allows to define which operations is better to put in practice in the cellar to protect and enhance the specificities that each single vine row of Nebbiolo is able to express.
