Pinot Noir grapes come exclusively from a parcel located in the Premier Cru of Les Pézerolles, which is located in the northeastern part of the Pommard communal area, towards the border with Beaune. \u003cstrong\u003eThe vineyard is almost 60 years old\u003c\/strong\u003e and is cultivated in a mid-hill area, characterized by soils composed of limestone marl. The grapes are rigorously selected, first in the vineyard during manual harvesting and then on the sorting table before vinification. After destemming, the grapes are fermented with indigenous yeasts and a maceration of two to three weeks.
