Pigato 'Bon In Da Bon' Bio Vio 2021

The Pigato "Bon in Da Bon" by the Ligurian wine cellar Bio Vio is a bottle that is able to remain impressed in the mind and senses with its fine mineral character and aromatic herbal scents. This family-run winery is distinguished by the excellence and typicality of its wines, as well as its eco-friendly production approach, strongly intent on enhancing the Ligurian territory with its excellence. The expression in the Ligurian dialect 'bon in da bon' literally translates into 'really good', underlining the astonishing pleasantness of this Pigato.

'Bon in Da Bon' Pigato Bio Vio consists solely of Pigato grapes grown under a certified organic regime in the Marixe locality on marly, ferruginous soils. The vineyards, some 60 years old, are located 100 metres above sea level. The grapes are harvested by hand late towards the end of October and then placed in cryomaceration for 24 hours, followed by soft pressing. The must is then left to ferment in stainless steel tanks at a controlled temperature, thanks to the intervention of indigenous yeasts only, and in the same type of container the wine  matures for 6 months before final bottling and a further 3 months in glass.

Bio Vio Pigato 'Bon in Da Bon' has a deep, intense straw-yellow hue. Ample aromatic citrus notes are perceived on the nose, followed by floral, mineral and slightly almondy perceptions. To the palate it is dry, balanced and intense, endowed with decisive fresh-savoury verve and long persistence on herbal sensations. Remaining in the territorial sphere, 'Bon in Da Bon' is an excellent accompaniment to traditional trofie pasta with basil pesto and pine nuts.
